Shitake, leek, pancetta, and gorgonzola tart.
Adapted from Cook’s Illustrated, I added the pancetta. First tart/pie dough I’ve ever done. This was made about two weeks ago, forgot to post. Quite delicious; the vegetables were cooked first, mixed with creme fraiche and dijon mustard, then the tart was formed and baked off. I spinkled the crust with truffle salt I got for Christmas. Super yummy.
